Vegan Black-eyed Peas Tomato Stew

After two interesting soups, my today's post is a super delicious again a nutritious stew i simply prepared with black eyed peas and tomatoes.Stews are similar to soups as there is no clear distinction between these two dishes. Stews have less liquid than soups and much thicker as well. Stew needs a longer cooking in low heat and soups can be cooked easily which requires less cooking time than stews. Stew can be served in a plate with rice, mashed potatoes or pastas while soups are always served in a bowl. You can add seasoning or flavourings to the stew depending upon your tastebuds. Actually i flavored mine with minced garlic, cumin powder, paprika and coriander powder along with dried oregano. Obviously this stew makes an excellent pair to enjoy with hot steaming rice.

This gluten free stew can be cooked easily with less efforts. You can cook black-eyed peas either by simmering in tomato sauce though you can use very well either tinned black-eyed peas or already cooked black-eyed peas. I went for a short cut method, yes i pressure cooked black-eyed peas earlier and used them in this stew. However once simmered in spiced tomato sauce, this black eyed peas tastes absolutely delicious. If you have enough time to cook your black eyed peas directly by simmering than pressure cooking them, please go on. And this stew is going for this week's blogging marathon as am running this week's marathon with Kid's delight-Soups and stews as theme.

Tomato Black-eyed peas Stew

2cups Cooked black-eyed peas
1cup Onion(chopped)
1tsp Minced garlic
2cups Tomatoes or 1can diced tomatoes
1tsp Salt
1tsp Coriander powder
1/2tsp Cumin powder
1tsp Paprika
Olive oil
1/4tsp Dried oregano

 Heat oil in a large sauce pan, add the chopped onions, minced garlic and saute until the onions turns transculent.

Add the chopped tomatoes or diced tomatoes and saute until the tomatoes turns mushy.

Add the coriander powder, cumin powder, paprika, salt and cook everything for a while.

Black eyed peas tomato stew

Add the black-eyed peas, pour enough water and cook everything well until the stew turns bit thick.

Serve it hot.

I prefer stews more during winters, I feel they are more filling and hearty! Black-eyed beans stew looks scrumptious!
